Mrs Cecilia is a very active producer in the Ubiriki cooperative who together with her
husband and son produce this exceptional natural coffee. The coffee on the Alto Santa Rosa Farm is a mixed variety of Caturra Roja, Caturra Amarilla, Pache and Catimor. Selected ripe cherries are hand sorted and soaked in a fermentation tank for 48 hours. Once complete coffee is pulped and parchment is placed in drying tunnels for 15 days until moisture has reached 11%.
