Villa Aroma is a testament to hard work and determination. Founded just five years ago by Cristian Campo Figueroa and Taaj Kumar, the farm was built from scratch on fertile land in Totoró, Cauca. Today, this lot thrives with approximately 2,000 carefully tended coffee trees, producing high-quality specialty coffee that reflects the unique terroir of the region. The farm is part of the Colombian Coffee Federation's Extensionist Program, ensuring it meets the rigorous standards required for specialty coffee production. The Federation regularly audits the farm, providing expert guidance and support to maintain excellence.
Pink Bourbon, native to the regions of Cauca and Huila, is celebrated for its vibrant flavour profile and natural resilience. The cherries are handpicked at peak ripeness by local experienced farmers, who meticulously select only the best for processing. After harvesting, the cherries are pulped to remove the outer skin and fermented for 24 hours to enhance their bright acidity and fruity characteristics. The beans are then thoroughly washed to remove mucilage and laid out to dry under the sun until they reach an optimal moisture content of 11%. This careful process preserves the clarity and complexity of the Pink Bourbon variety, resulting in a cup that is as vibrant as the land it comes from.
