Wilson Ducuara is a skilled coffee producer. He began producing specialty coffee more than eight years ago, which marked the start of a transformation in the region. Wilson pioneered the cultivation of exotic varieties, which led to the production of specialty coffees on nearby farms. El Jardín, his farm, is home to natural springs and a forest reserve that contains trees like cedar. This farm is located in la vereda Betulia, a locality in the municipality of Anzoátegui in the Colombian district of Tolima.
The Gesha Ducuara coffee process begins by picking the cherries, followed by a 24-hour pre-fermentation process in cherry. They then undergo depulping and a 72-hour period of aerobic fermentation at a controlled temperature. After that, they are dried on canopies for 72 hours. Finally, they are stabilized at ambient temperature and stored in GrainPro bags to enhance flavors.
