This HCS Regional coffee undergoes a systematic 3 stage process: The first is washing and disinfecting of cherries upon arrival to the processing station, with removal of green/immature beans as well as leaves, stems and dirt. The second is an oxidation stage for 24 hours before de-pulping and rinsing off the mucilage. Finally, the third is controlled and homogenous mechanical drying process.
