The cherries are first oxidised, then \u003cbr\u003emoved through staged anaerobic fermentations, controlled thermal shock wash. \u003cbr\u003eAfter drying, the coffee is decaffeinated using the natural sugar cane process (EA \u003cbr\u003edecaf) \u003cbr\u003eFor decaffeination, the Sugar Cane Process is used a method developed in Colombia. \u003cbr\u003eMolasses from sugar cane is fermented to produce ethanol, which is combined with \u003cbr\u003eacetic acid to create ethyl acetate (EA), a naturally occurring compound found in \u003cbr\u003efruits and fermented products.
